- comments: observed tcs foods at improper temperature requirement stored in prep cooler (air temperature of 41. 0f). Found internal temperature of the following food products. Beef at 62. 5f and 82. 3f, chicken at 46. 7f and rice at 44. 8f instructed all tcs foods must maintain cold holding temperature of below 41. 0f and hot holding temperature of above 135. 0f. Operator voluntarily discarded and denatured foods during inspection. Priority violationi 7-38-005. Citation issued.

47. Food & non-food contact surfaces cleanable, properly designed, constructed & used
- comments: observed torn/damaged rubber gasket on door of the freezer in the rear prep. Instructed to repair or replace gasket.

49. Non-food/food contact surfaces clean
- comments: observed accumulated grease and food debris on interior and exterior surfaces of cooking equipment, prep tables, coolers, freezers. Instructed manager to clean and maintain.

51. Plumbing installed; proper backflow devices
- comments: observed small leak at the 3 compartment in the front. Instructed manager to repair

55. Physical facilities installed, maintained & clean
- comments: found dirt and old food debris on the floor underneath the dry storage shelving in the rear prep room and next to the ac unit (especially along the wall bases) in the dish room. Instructed management to detail clean and maintain.
