Report date: Apr 9, 202520. Proper cooling time and temperature
- comments: observed improper cooling of prepared coleslaw. Coleslaw in a large plastic tub tightly covered with other stored foods on top in the walk-in cooler at a temperature of 48. 5f. Manager states the coleslaw was prepared earlier in the morning. Reviewed proper cooling methods, times and required temperatures. Corrective action was taken of quick chilling the uncovered cole slaw in the walk-in freezer. Priority violation 7-38-005 see violation #22 for citation.
22. Proper cold holding temperatures
- comments: noted approximately 2 lbs cole slaw and 5 lbs assorted sauces labeled "keep refrigerated" held at improper cold holding temperatures of 48. 9f. All discarded. Priority violation 7-38-005 citation issued.
33. Proper cooling methods used; adequate equipment for temperature control
- comments: front prep drawer cooler unable to maintain adequate temperature. Temperature noted at 51f with food such as cole slaw at 48. 9f. Cooler tagged held for inspection and must not use repaired, maintains a temperature of 41f or below and c. D. P. H contacted for reinspection and tag removal. Priority violation 7-38-005 citation issued.

- comments: all stored items in the rear dry food storage room must be elevated from the floors.
56. Adequate ventilation & lighting; designated areas used
- comments: missing and damaged light shields in the rear dry food storage room above stored flour and to go containers. Must replace.

- comments: no proof of allergen training or certificates for all the city of chicago certified food managers. Must provide.
60. Previous core violation corrected
- comments: previous core violations from 8-27-24 report #2600756 not corrected. #49-shelving under bag in box soda, with food debris and food spillage. Must clean and maintain. #57- no proof of food handler training or certificates for all required employees. Must provide. #55- floors, under front equipment, with dirt, grease, food debris. Instructed to clean and maintain. Priority foundation violation 7-42-090 citation issued.
