- comments: 8-404. 13 (b:3) observed previous priority foundation violation not corrected from report #2589438 2/9/24. They are as follows. Violation #47 observed microwave in need of cleaning. Instructed manager to clean and maintain violation #49 -observed a build-up of ice, dirt, and food debris inside the walk-in freezer and instructed to clean the walls, floor, and door. I also observed the walls and floor inside the walk-in cooler with a build-up of dirt, stains, and food debris. Instructed to clean and maintain both. -observed a heavy accumulation of dirt, grease, and food debris on the cooking and non-cooking equipment. Instructed to clean and maintain all areas and equipment. Violation #55 -observed standing water under the 3-compartment sink around the ice machine. Instructed to clean and maintain. -observed the walls, floors, and ceilings throughout the food service area with a heavy build-up of grease, dirt, food debris, stains, and food splatter. The rear dishwashing area, the middle prep area where the steam table unit is, the front food service area where chicken is prepared, and the front customer counter area. All areas must be cleaned and maintained. - observed excessive build-up of grease in all floor drains throughout the facility. Observed build-up of grease on walls and in corners throughout prep and cooking areas of the facility. Instructed person in charge to clean and maintain at all times. Violation #58 observed no allergen training for certified managers on site. Instructed certified manager to obtain allergen training and maintain certificate on site. Instructed to correct all previous violations and maintain. #7-42-090. Priority violation citation issued.
