- comments: observed excessive black mold like substance on the interior of the ice machine in the food prep area. The said substance was observed above the ice, which is used for human consumption. Instructed to adequately clean, sanitize and maintain said ice machine. Priority foundation violation 7-38-005, citation
38. Insects, rodents, & animals not present
- comments: observed dead bugs in the corner where the cooling racks were stored across from the high temperature dishwashing machine. Instructed to remove said bugs, clean and sanitize all affected areas.
39. Contamination prevented during food preparation, storage & display
- comments: observed the handwashing sink near the food prep table near the dry storage closet without a splash guard. Instructed to install a smooth and easily cleanable splash guard at the said handwashing sink and maintain.
44. Utensils, equipment & linens: properly stored, dried, & handled
- comments: observed four-five racks used for the grill and the oven with severe rust and burnt residue stored on the rack near the three-compartment sink. Instructed to clean and maintain said racks before storing.
47. Food & non-food contact surfaces cleanable, properly designed, constructed & used
- comments: observed in the paper goods storage closet the use of milk crates being used as a method of elevation. Instructed to refrain from using milk crates as a method of elevation and install proper shelving units that are smooth and easily cleanable.
52. Sewage & waste water properly disposed
- comments: observed when the sink across from the cooking equipment under the ventilation hood is in use water backs up from the floor drain, pooling water onto the floor of the food prep area. Informed person in charge of requirements and must repair sink and maintain. Priority violation 7-38-030(c), citation issued.
54. Garbage & refuse properly disposed; facilities maintained
- comments: observed the outdoor garbage dumpsters overflowing with garbage, preventing the lid from being able to close and remain tight fitting. Instructed to always have dumpster lid closed andtight fitting, to prevent food source for pest. Priority foundation 7-38-020(b), citation issued.
55. Physical facilities installed, maintained & clean
- comments: observed a small puddle of standing water behind the shelving unit to the right of the walk-in cooler. Instructed to remove standing water and maintain.
