- comments: observed a slight debris accumulation encrusted on the interior of the ice maker. Must remove debris, detail clean inside ice machine/have serviced and maintain ice machine at all times.
43. In-use utensils: properly stored
- comments: observed knives improperly stored behind the prep table and the wall. Instructed to properly store knives in a knife rack to prevent contamination and maintain. Observed ice scoop stored inside the ice maker. Instructed to properly store in a separate, clean container to prevent contamination and maintain.
47. Food & non-food contact surfaces cleanable, properly designed, constructed & used
- comments: instructed to transfer food products from an open original can container into food grade container for proper food.
49. Non-food/food contact surfaces clean
- comments: instructed to detail clean the grease buildup inside of the deep fryers and maintain.
54. Garbage & refuse properly disposed; facilities maintained
- comments: observed the outside grease container not maintained; has excessive grease on top and sides of lid with spilled grease debris on to the ground. Instructed to detail clean and maintain the outside grease container dumpster to prevent pest source for pests. Priority foundation violation 7-38-020(b), citation issued.

- comments: instructed to detail clean and maintain floors with grease and dried food debris accumulation along the walls and in all corners throughout prep/cooking area especially under and around cooking equipments and maintain.

- comments: instructed to detail clean the kitchen exhaust hood system/filters to remove excessive accumulation of grease build-up and maintain.

- comments: observed the certified food manager without the allergen training certificate. Must show proof of training. Allergen training is required for all employees that have a city for chicago food sanitation certificate. Instructed to complete training and keep certificate on site.

- comments: previous core violations from inspection report2622132 dated:08/12/2025 37---3-302. 12: **c** food storage containers identified with common name of food. Observed dry food storage containers not labeled in the rear food prep area. Instructed to label and maintain. 49---4-601. 11(c): (c) nonfood-contact surfaces of equipment shall be kept free of an accumulation of dust, dirt, food residue, and other debris. Observed the following in need of deep cleaning: the lower shelves under the food prep tables, the outerior and interior of the cold holding units, the carts with wheels being used to hold food items, and the sides of the cooking equipment. All mentioned surfaces found with severe grease and food build up. Instructed to deep clean and maintain. 55---6-501. 114: **c** maintaining premises, unnecessary items and litter observed the toilet room cluttered with cooking equipment. Instructed to declutter and maintain. 57---2-102. 13: **c** food handler training (pa 100-0367 food handling regulation enforcement act) observed no food handler certificates on site. Instructed all food handlers without the certified food manager certificate must take food handler course and maintain records on site. Instructed to comply with noted violations and maintain by 2-11-2026. Priority foundation violation 7-42-090, citation issued.
