- comments: must clean the exterior of the spice container use by woks to remove food splatter. Also clean the interior of the reach in coolers and prep coolers to remove food debris and spills.

- comments: floors need deep cleaning behind cooking equipment to remove grease and debris.

56. Adequate ventilation & lighting; designated areas used
- comments: observed the hood and filters above the cooking equipment dirty. Must clean and maintain.

57. All food employees have food handler training
- comments: observed the idph food handler certificates for the food handler's have expired. Instructed manager to renew and maintain as required or citation will follow.

58. Allergen training as required
- comments: observed the city certified manager allergen training certificate has expired. Instructed her to renew and maintain as required or citations will follow.
