- comments: the person in charge does not have a city of chicago food service sanitation certificate at this time. Priority foundation violation.
2. City of chicago food service sanitation certificate
- comments: observed no city of chicago certified food service manager on site while tcs foods are been prepared and served such as soups, meatballs, tuna chicken sandwiches etc. Instrcuted to operate with a city of chicago certified food dervice manager at all times food is being prepared and served. Priority foundation violation 7-38-012 citation issued.
36. Thermometers provided & accurate
- comments: visible and working thermometer needed in front prep coolers. Must provide and maintain.
41. Wiping cloths: properly used & stored
- comments: observed wiping cloths stored on top of rear food prep table. Must properly store wiping cloths in a sanitizing solution when not in use.
60. Previous core violation corrected
- comments: observed previous core violations not corrected from inspection report#2587798 on 01/09/2024. #45 all stored items throughout the rear dry storage room must be elevated from the floors. #55. Noted the bottom threshold step into the walk-in freezer in poor repair with broken, open crevice. Must repair to be smooth and cleanable to prevent food and liquid accumulation. #55 noted blackened, moldy wall caulking at the three compartment sink. Must replace. Missing ceiling tiles above the walk-in cooler. Water damaged ceiling tiles throughout the rear dry storage room. Must replace all floors throughout the rear dry storage room with dirt and debris. Must clean and maintain. Priority foundation violation 742-090 citation issued.
