- comments: observed black slimy substances on interior water components of the ice machine,dripping into ice 'ice is used for human consumption'. Instructed management to turn off machine, remove ice and have interior of ice machine cleaned and sanitized and maintain. Priority foundation violation 7-38-005,citation issued.
22. Proper cold holding temperatures
- comments: observed improper cold holding temperatures of (tcs foods) inside of the 2 door stand-up cooler. Observed large containers of beef soup at 50. 1f,large container of shrimp soup at 52. 0f,large container of cooked beans at 52. 1f stored in said cooler from the previous day. Management voluntarily discarded approximately 40#'s of food worth $300. 00. Instructed management to monitor and maintain all cold (tcs foods) at 41f or colder at all times. Priority violation 7-38-005,citation issued.
47. Food & non-food contact surfaces cleanable, properly designed, constructed & used
- comments: observed chipped paint and rust on the wire storage racks in the 2-door stand-up-cooler located directly across the 3-compartment sink area. Instructed to remove chipped paint and rust and repaint or replace the shelves and maintain.
49. Non-food/food contact surfaces clean
- comments: instructed to detail clean the interior of the microwave,prep coolers and storage shelfs behind the front service counters and maintain.
55. Physical facilities installed, maintained & clean
- comments: instructed to detail clean floors along the walls and in all corners throughout the front food prep/dishwashing area with dried-up food debri spills especially under and around cooking equipments.
56. Adequate ventilation & lighting; designated areas used
- comments: instructed to detail clean the kitchen exhaust hood/filters to remove accumulation of grease build-up and maintain.
58. Allergen training as required
- comments: observed the certified food manager with expired allergen training certificate. Instructed to provide and maintain as required.
