- comments: observed no thermometer inside the kitchen 2 door prep cooler. Instructed to provide and maintain a visible accurate, working thermometer inside refrigeration units at all times.
37. Food properly labeled; original container
- comments: observed packaged desserts not properly labeled in the prep cooler. Instructed to label all desserts with common name, name of manufacturer and address, ingredients, net contents, etc.
38. Insects, rodents, & animals not present
- comments: observed evidence of pest activity on the premises. Observed approx. 50 rodent mice droppings on the floor in cluttered rear dry storage room. Additional pest control service is needed to eliminate the pest activity. Must clean in detail and remove all rodent droppings from affected areas. Priority foundation violation 7-38-020(a), citation issued.
51. Plumbing installed; proper backflow devices
- comments: observed no sink for food preparation at front prep area where fresh fruit squeezed juices etc. Are made to order. Must install and maintain.
55. Physical facilities installed, maintained & clean
- comments: instructed to detail clean and organize the rear dry storage room and remove unnecessary articles due to potential pest harborage and elevate mops,brooms cleaning equipments off the floor at least 6" inches to facilitate cleaning.
58. Allergen training as required
- comments: observed the certified food manager with expired allergen training certificate. Must show proof of training and maintain.
