- comments: observed no person in charge with valid chicago food sanitation certificate.
2. City of chicago food service sanitation certificate
- comments: observed no certified food manager on duty while foods are being prepared, handled and served such as (italian beef sandwiches and nachos with cooked ground beef) must be on site at all times. Priority foundation 7-38-012. Citation issued.
22. Proper cold holding temperatures
- comments: observed tcs/raw foods held at improper internal temperatures in the front display cooler, such as 10lbs of hot dogs at 50.1, 10lbs of eggs at 55.0f and 10lbs of milk at 60.0f. Manager discarded and denatured a total 30 lbs at $200. All cold tcs food must maintain 41f or below. Priority violation. Citation issued 7-38-005.
33. Proper cooling methods used; adequate equipment for temperature control
- comments: noted improper cold-hold temperature of 60f at display cases. Informed all refrigerator units shall maintain a proper temperature of 41f and below. Refrigerator unit must not be used until reinspected by chicago department of public health (cdph). Priority violation 7-38-005. Citation issued.
38. Insects, rodents, & animals not present
- comments: observed a prohibited animal (cat) on site in rear storage area of the facility. Person in charge was made aware that such animals are prohibited from food establishment. Instructed to remove animal from the facility and maintain at all times. Priority foundation 7-40-060. Citation issued.
