Tcs foods for cold holding shall be at 41f or below at all times. Manager voluntarily discarded and denatured 480 lbs valued at $1,ooo. Oo. Priority violation 7-38-005

- comments: observed the walk in cooler at improper temperature (50. 0f). Cooling holding equipment shall be at 41f or below. Instructed to repair and maintain. Cooler tagged. Priority violation 7-38-005

- comments: no sanitizing solutions testing devices on site at time of inspection. Instructed to provide and maintain. Priority foundation 7-38-005

- comments: continued non compliance for violation 58 observed the city of chicago food service sanitation managers without the required allergen training certificates. Instructed all city of chicago food service sanitation managers must meet requirement. Core violations not corrected by the previous inspection date (8-7-20) are classified as a priority foundation 7-42-090
