Must provide proper, raised shelving to store food containers 6' off floor. . #47- noted cardboard boxes used to line shelves throughout. Instructed to clean and remove all cardboard boxes to prevent hiding places for pest. #49- instructed to detail clean the service prep cooler with food spills, counter tops of the hot holding containers, all cooking equipment and around the service coolers with dirt, food particle, grease. #55-instructed to detail clean and maintain floors throughout the kitchen prep and dish washing area especially along wall base and underneath cooking equipment with thick, grease, dirt and spills. #56- noted heavy dirt and grease accumulation inside, on pipes/conduits and on edges of the exhaust hood and filters above cooking equipment. Instructed to detail clean and maintain hood, filters and pipes/conduits. Priority violation 7-42-090 citation issued.
