22. Proper cold holding temperatures
- comments: 10 containers of coleslaw at improper cold holding temperature of 54. 1f in prep cooler that is tagged and held for inspection from previous inspection 6/21/21. Coleslaw discarded and denatured at this time. Approx 10lbs $50 value. Citation issued 7-38-005 priority violation

33. Proper cooling methods used; adequate equipment for temperature control
- comments: prep cooler in use is unable to hold cold foods at improper temperatures, internal air temperature of 60. 0f. Cooler has held for inspection tag on it from previous inspection. Instd to not use until repaired, reinspected and tag has been removed by cdph. Citation issued 7-38-005 priority

39. Contamination prevented during food preparation, storage & display
- comments: 3-305. 11: observed food items stored on floor in walk-in cooler. Instructed manager to elevate all food six inches off floor.

49. Non-food/food contact surfaces clean
- comments: 4-602. 13: observed accumulated grease and food debris on exterior of fryers. Instructed manager to clean and maintain.

53. Toilet facilities: properly constructed, supplied, & cleaned
- comments: 5-501. 17: observed no covered waste receptacle in staff toilet room. Instructed manager to provide and maintain.

55. Physical facilities installed, maintained & clean
- comments: 6-501. 11: observed accumulated grease and food debris on floor in main prep area. Instructed manager to clean and maintain.
