- comments: observed hot water sanitizing final rinse temperature at high temperature dish machine at 117f. Hot water sanitizing final rinse must be at least 180f-194f. Priority violation. 7-38-025. Citation issued.

22. Proper cold holding temperatures
- comments: observed cut watermelon at improper cold holding temperature at 50f sitting on ice in dining area. Also observed cut cantelope ranging from 47f-50f, whip cream at 52f, sliced cheese cakes at 46f. Observed tcs foods at breakfast prep line cooler at improper cold holding temperature ranging from 46f-56f such as diced tomatoes, diced ham and shelled eggs. Time temperature control for safety foods must be held at 41f or below. Food discarded. Food weighing approximately 50 lbs at a cost of $300.00. Priority violation. 7-38-005. Citation issued.

- comments: observed improper ambient temperature inside of prep cooler located at breakfast prep line at 46.2f. Proper ambient temperature inside of a cold holding unit must be at 41f or below. Priority violation. 7-38-005. Citation issued.

- comments: observed torn gaskets on sides of high temperature dish machine. Must seal and repair.

- comments: previous core violation not corrected from 5-21-2026, report 2637272. 51-- 5-205.15--observed minor leak at the hot water knob hand sink located at cafe deli prep line. Must repair. 55- 6-201.11--observed heavy grease and food debris on the floors under cooking equipment and in corner at the cafe breakfast prep line. Must clean and maintain.
