- comments: observed thin crust and deep dish pizza slices stored in the carryout hot holding unit with a temperature between 115-125f. Management instructed to maintain all hot foods above 135f. Priority violation 7-38-005. Citation issued.

22. Proper cold holding temperatures
- comments: observed sliced cheeses at 44f inside of the line prep cooler. Management instructed to maintain all cold tcs foods below 41f at all times. Priority violation 7-38-005. See violation 21 above for citation.

47. Food & non-food contact surfaces cleanable, properly designed, constructed & used
- comments: observed plastic food storage containers used to store croutons with cracks in the plastic. Management instructed to replace all cracked food storage containers.

49. Non-food/food contact surfaces clean
- comments: clean the top of the dishwashing machine in the dishwashing area, wire storage racks in the walk-in cooler, potato cutter mounted to the prep table, prep tables and storage shelves throughout the food prep area, and interior of prep coolers.

51. Plumbing installed; proper backflow devices
- comments: observed the exposed hand washing sink behind the basement bar to be slow draining. Management instructed to repair so that the sink drains properly.

55. Physical facilities installed, maintained & clean
- comments: clean the floor of the walk-in freezer.
