29. Compliance with variance/specialized process/haccp
- comments: noted premise making yogurt with no haccp plan or variance as required by the city food code rule. Must use commercially prepared yogurt until a haccp plan approval is obtained. Manager immediately and voluntarily disposed of 60 lbs of products worth $180. 00 through denaturing process. Priority foundation violation #7-38-005(a). No citation was issued.

32. Variance obtained for specialized processing methods
- comments: no documentation submitted to the cdph for variance approval to make yogurt. Instructed to submit the documentation for review and approval by the health department. Priority foundation 7-38-005(a). No citation issued today

37. Food properly labeled; original container
- comments: noted bulk food items stored inside containers at the rear food dry storage not properly labeled. Instructed management that all bulk and working food ingredient containers must be labeled with contents name.

38. Insects, rodents, & animals not present
- comments: noted rear exit door not rodent proof with gap at the bottom of door (about 1/4 inch). Instructed to seal gaps to prevent entry points for pests.

43. In-use utensils: properly stored
- comments: noted serving plates at the dining table, waiters station and kitchen on counter top not properly stored. Instructed to invert all serving plates at the dinning tables to prevent dust accumulation
