- comments: observed no certified food manager on site during the inspection while the time/temperature control for safety foods (ground beef) has been prepared and served. Instructed a city of chicago certified food manager must be on site with the original certificate posted on site, at all times while foods are being prepared and served. Priority foundation violation 7-38-012, citation issued
10. Adequate handwashing sinks properly supplied and accessible
- comments: observed no handwashing soap at the handwashing sinks in the dishwashing area and in the food prep area. Instructed to provide all handwashing sinks with handwashing soap and maintain. Priority foundation #7-38-030(c) consolidated with above citation
39. Contamination prevented during food preparation, storage & display
- comments: observed a chunk of deli meat not covered stored in the cold holding unit in the food prep area. Instructed to cover and properly store food items and maintain.
48. Warewashing facilities: installed, maintained & used; test strips
- comments: observed one sink stopper missing for the three compartment sink. Instructed to provide and maintain.
51. Plumbing installed; proper backflow devices
- comments: observed the hot water knob not working properly on the mop sinl. Instructed to repair said knob in order to proper operate hot water for mop sink and maintain.
54. Garbage & refuse properly disposed; facilities maintained
- comments: observed the lid on the outdoor garbage receptacle with a hole. Instructed to replace said lid in order to keep the receptacle rodent proof and maintain.
55. Physical facilities installed, maintained & clean
- comments: observed an opening under the handwashing sink in the food prep area. Instructed to properly seal said opening and maintain.
