Report date: Jan 3, 202510. Adequate handwashing sinks properly supplied and accessible
- comments: observed handwashing sink at the main cook line area missing signage notifying food employees to wash hands. Instructed to provide adequate signage at all handwashing sinks and maintain at all times.
49. Non-food/food contact surfaces clean
- comments: observed excessive build up of encrusted grease deposits along food- and nonfood-contact surfaces of cooking equipment (griddles, stove, surrounding stainless steel walls and supports) throughout the main cook line area. Instructed to clean food- and nonfood-contact surfaces of equipment at adequate frequency and with appropriate cleaning materials to eliminate encrusted grease deposits on cooking equipment and maintain at all times.
55. Physical facilities installed, maintained & clean
- comments: observed non-functional ceiling-mounted redundant cooling fan in the rear area of the walk-in cooler to be in poor repair, filled with sealant foam and not easily-cleanable. Instructed to repair ceiling-mounted fan to that it is easily-cleanable or remove from ceiling and maintain surrounding wall and ceiling surfaces as cleanable.
55. Physical facilities installed, maintained & clean
- comments: observed floor and wall on right-hand side below dish machine in the warewashing area to be filled with sealant foam and exposed concrete, not easily-cleanable. Instructed to replace or resurface floor and wall surfaces in this area and maintain all floor and wall surfaces smooth and easily-cleanable.
60. Previous core violation corrected
- comments: previous core violation not corrected from previous inspection dated january 29th, 2024 report #2588752: violation #51 observed no service sink for collecting and dumping dirty mop water. Must install service sink with hot and cold running water and necessary back flow prevention devices. No service sink observed on-site at time of inspection. Instructed person-in-charge to correct and maintain all previous violations. Priority foundation. 7-42-090 citation issued.
