- comments: observed large bins used to store raw and cooked chicken/fish with excessive amounts of dried buildup on food contact surfaces. Instructed to clean and mkaintain in between uses.
23. Proper date marking and disposition
- comments: observed approximately 50 lbs of previously cooked chicken parts stored inside walk-in cooler without labels. Instructed to provide discard date labels on food items stored on site for more than 24 hours. Priority foundation violation. #7-38-005. Citation issued. The person in charge volunatrily discarded during the time of inspection. Total: $150.
38. Insects, rodents, & animals not present
- comments: observed approximately 30 small rodent droppings in the rear prep area on the floor under the shelving rack where breading bulk containers are located as well as inside the office scattered on the floor. Instructed to contact pest control for service, clean and sanitize said areas. Must eliminate activity. Priority foundation violation. 7-38-020 (a). Citation issued.
49. Non-food/food contact surfaces clean
- comments: observed shelving units and storage carts throughout the establishment's front and rear prep areas encrusted with grease, dirt, and dried food debris. Noted interior surfaces of all cooling units stored in the front prep area in need of cleaning. Instructed to remove buildup and clean and maintain equipment.
