- comments: observed no date marks on ready-to-eat tcs foods (cooked pasta and sauces) stored in the refrigerators for more than 24 hours. Management instructed to date mark all ready-to-eat tcs foods stored for more than 24 hours with a date to indicate when the food must be used or discarded. Priority foundation violation 7-38-005. Citation issued.

41. Wiping cloths: properly used & stored
- comments: observed wet wiping cloths stored on top of the food prep tables. Management instructed to store wet wiping cloths in a container of sanitizing solution when not in use.

49. Non-food/food contact surfaces clean
- comments: clean the interior and exterior of the deep fryers and interior of the pizza prep cooler.

55. Physical facilities installed, maintained & clean
- comments: clean the food debris and litter on the floor behind the chest freezer behind the front counter.

60. Previous core violation corrected
- comments: previous core violations from report #2547106 on 1/28/22 not corrected: 55 - clean the grease on the wall next to the deep fryers and on the floor under and behind the stove and deep fryers. Clean the walls and ceiling of the rear food prep area and dish washing area. 55 - replace the broken floor tiles in front of the ice machine and exposed hand washing sink behind the counter. 58 - no allergen training certificates provided for the certified food managers. Management instructed that all certified food managers must show proof of training. Priority foundation violation 7-42-090. Citation issued.
