- comments: observed facility not meeting thawing requirements. Food handler thawing frozen beef in a plastic bag underneath a prep table. Informed food handler of proper thawing methods (must utilize running water with enough volatility when thawing). Must meet proper thawing requirements and maintain.

36. Thermometers provided & accurate
- comments: observed no metal stem thermometer on site to monitor the internal food temperature of tcs food cooked, delivered and served. Facility must obtain and maintain proper thermometers. Priority foundation violation #7-38-005. Citation issued

38. Insects, rodents, & animals not present
- comments: observed no current pest control log book on the premises. Instructed the person in charge that a licensed pest control company and operator must provide at least 2 pest inspections a year, and the reports must be maintained in the log book. Instructed to provide a current pest control logbook and pest inspection reports. Priority foundation 7-38-020(c). Citation issued.

47. Food & non-food contact surfaces cleanable, properly designed, constructed & used
- comments: observed cardboard used as liner on shelves in the dry storage area and interior of the sliding door cooler in the dishwashing area. Instructed to remove.

51. Plumbing installed; proper backflow devices
- comments: observed the hand sink in the front food prep area to have slow water draining. Instructed to repair plumbing.

55. Physical facilities installed, maintained & clean
- comments: observed mop in a position that does not allow it to dry properly and prevent pest harborage. Must store mop after use in a mounted position that allows for air-drying without soiling and pest harboraging.

60. Previous core violation corrected
- comments: noted previous core violation #58 not corrected from report #2578128 conducted on 06/30/2023: observed no food allergen training for food manager. Must provide certificates of completion on-site and maintain records. Priority foundation violation #7-42-090. Citation issued.
