22. Proper cold holding temperatures
- comments: observed the following cold-held tcs foods at improper temperatures during the time of inspection. . . Approximately 10lbs cooked steak (59f), and approximately 5 lbs cooked pork @56. 7f both stored inside refrigertaion unit with cold hold attached. Instructed to hold all cold food items at 41f and below at all times and maintain. Person in charge voluntarily discarded both said items. Priority violation. # 7-38-005. Citation issued.

- comments: observed walk-in cooler not maintaining proper temperature 58. 9f. Instructed manager to repair and maintain cooler at 41f or below. The prep cooler is tagged held for inspection and must not be used until reinspected by the chicago department of health. Priority violation. #7-38-005. No citation issued.

- comments: noted missing thermometers inside all cooling units on the premises. Instructed to provide and maintain.

- comments: observed evidence of pest activity on the premise during the time of inspection. Noted approximately 30 live large black flies flying throughout butcher prep area, in rear prep area on prep table surfaces, and throughout rear prep area on freezer unit and stored dried kitchenware. Noted approximately 40 small rodent droppings scattered on the floor throughout the taqueria prep area and in corners under equipment in butcher prep area. Instructed to contact pest control for service, clean and, and sanitize all said areas. Must eliminate activity. Priority foundation violation. #7-38-020 (a). Citation issued.

- comments: observed hot hold unit in rear prep area with corners of equipment mended together with tape. Instructed to repair and maintain equipment in good condtion.

- comments: observed all cooling internal and external surfaces with accumulated build up of food debris and spills. Isntructed to clean.

53. Toilet facilities: properly constructed, supplied, & cleaned
- comments: noted no self closing door on employee toilet room. Instructed to provide.

54. Garbage & refuse properly disposed; facilities maintained
- comments: noted grease receptacle surfaces with accumulated grease build up. Instructed to clean in order to prevent pest harborage.
