- comments: must label the bulk storage containers in the kitchen area and bakery area with the name of the product inside of the container.
38. Insects, rodents, & animals not present
- comments: observed evidence of mice on premises. Found 100 mouse droppings on the floor in the storage area loading dock and along the wall ledge, on the bottom of the pallets in the produce walk-in cooler and on the floor behind the storage shelves storing plastic containers near the juicing area. Also observed two mice on glue boards behind these shelves. Instructed to clean all affected areas and to have the pest control company come out to service prior to reinspection next week. Priority foundation violation 7-38-020(a) issued.
38. Insects, rodents, & animals not present
- comments: observed two exit doors with worn door sweeps at the bottom. One in the storage area behind the bakery and the other in the dock area by the compactor. Instructed to replace door sweeps to completely rodent proof doors.
49. Non-food/food contact surfaces clean
- comments: instructed to clean the exterior surfaces of the bulk storage containers in the bakery area. Clean the can opener blade in the kitchen area and maintain. Clean the interior bottom and exterior surfaces of the fryers in the kitchen area.
55. Physical facilities installed, maintained & clean
- comments: instructed to clean the floors in all areas mentioned in violation #38. Clean floor under the storage containers in the bakery area to remove spillage. Clean floor behind the oven in the bakery area to remove standing water. Clean floor inside of the dairy walk-in unit to remove broken eggs. Clean floor drains at various three comp sinks in prep areas where needed. Clean the fan covers in the chicken processing room to remove dust observed.
