- comments: instructed to provide handwashing signage at all handsinks (prep areas, washrooms).
16. Food-contact surfaces: cleaned & sanitized
- comments: observed black slimy substances on interior water components of the ice maker,dripping into ice 'ice is used for human consumption'. Management was instructed to turn off machine, remove ice and have interior of ice machine cleaned and sanitized and maintain. Priority foundation violation 7-38-005,citation issued.
36. Thermometers provided & accurate
- comments: observed no thermometer inside the walk-in-cooler. Instructed to provide and maintain a visible working thermometer and maintain at all times.
41. Wiping cloths: properly used & stored
- comments: instructed to properly store all washcloths in a sanitizing solution especially when not in use.
47. Food & non-food contact surfaces cleanable, properly designed, constructed & used
- comments: observed a torn door gaskets inside of the kitchen 3 door stand-up cooler. Instructed to replace the torn door gaskets and maintain.
51. Plumbing installed; proper backflow devices
- comments: backflow prevention device not located at utility mop sink location basement. Must install so backflow prevention device may be located to be serviced and maintained.
55. Physical facilities installed, maintained & clean
- comments: floors along walls and in all corners throughout the food prep areas and dry storage areas with food debris spillage especially underneath the cooking equipments. Instructed to detail clean floors and maintain.
56. Adequate ventilation & lighting; designated areas used
- comments: observed burnt-out light bulbs in kitchen prep/dishwashing 3-compartment sink area. Instructed to replace burnt-out light bulbs and maintain adequate lighting at all times.
