- comments: observed approx:20 rodent(mice)droppings on floor along the walls and in corners in the cluttered rear dry storage room. Instructed to detail clean and remove all rodent droppings and sanitize affected areas;additional pest control service is now reccomended. Priority foundation violation 7-38-020(a),citation issued.

44. Utensils, equipment & linens: properly stored, dried, & handled
- comments: observed pots and pans not properly stored throughout the kitchen shelves. Must properly store and invert and multi-use utensils (handles-up)to prevent contamination before use.

47. Food & non-food contact surfaces cleanable, properly designed, constructed & used
- comments: observed torn door gaskets inside of the prep cooler directly across the cooking grill. Instructed management to replace the torn door gaskets and maintain.

- comments: instructed to detail clean fan covers/condensor in walk-in-cooler to remove accumulation of dusts and maintain.

- comments: instructed management to better maintain outdoor dumpster enclosure and remove broken unused wooden pallets due to potential pest harborage.

- comments: instructed to detail clean and organize the rear dry storage room and remove unnecessary articles due to potential pest harborage and remaining items must be properly stored and elevated off the floor at least 6' inches.

- comments: allergen training is required for all employees that have a city of chicago food sanitation certificate. Instructed to complete training and keep certificate on site.
