- comments: observed improper cold holding temperatures of tcs foods inside of the 2 door prep cooler. Observed chicken at 44. 1f, soup at 48. 4f, salsa at 46. 4f, cooked potatoes at 51. 4f, ranch dressing at 44. 6f, and beans at 49. 5f. Management instructed to maintain cold foods below 41f. Priority 7-38-005. Citation issued.

33. Proper cooling methods used; adequate equipment for temperature control
- comments: observed the 2 door prep cooler with an air temperature of 48. 7f. The cooler was used to store tcs foods such as chicken and soup. Management instructed to repair and maintain the cooler below 41f. Priority 7-38-005. Citation issued.

55. Physical facilities installed, maintained & clean
- comments: clean the debris on the basement floor.

56. Adequate ventilation & lighting; designated areas used
- comments: clean the grease from the ventilation hood and filters above the cooking equipment.

57. All food employees have food handler training
- comments: observed several food handling employees without a food handler certificate. Management instructed that all food handling employees must show proof of training.
