- comments: found a minimal amount of black mold-like substance inside the top interior of the ice machine.

21. Proper hot holding temperatures
- comments: found improper hot holding temperatures. Found chicken at 126f at time of inspection located in food prep area/ must provide a minimum hot holding temperature of 135f at all times. Instructed manager to discard 10 lbs of chicken at $25. Priority violation. 7-38-005. Citation issued.

60. Previous core violation corrected
- comments: found continued non-compliance. The following previous core violations were not corrected by correct by date from inspection report # 2561409 on 7/28/22: 6-201. 11 observed floors throughout the entire food prep area must be regrouted. Instructed to make all surfaces smooth and easily cleanable. 6-501. 12 observed floors with excessive accumulated dirt, food, and grease debris throughout the entire food prep area under all equipment, shelves, 3-compartment sink, and dish machine. Instructed to clean all. Observed the city of chicago food service sanitation manager, that is on duty at the time of the inspection, was unable to provide a allergen training certificate. Instructed to meet requirements. Instructed manager to comply. Priority foundation violation. 7-42-090. Citation issued.
