- comments: observed no paper towel on premises at all handsinks and no hand dryer available. Instructed to provide and maintain. Priority foundation violation. #7-38-030(c). Citation issued.
22. Proper cold holding temperatures
- comments: noted internal temperatures of the following time/temperature control for safety food items inside the food display cooler to be improper: rice and beans at 52. 1f, and cooked cabbage at 59f. Manager immediately and voluntarily disposed of 7 lbs of products worth $80. 00 through denaturing process. Priority violation #7-38-005. Citation issued.
37. Food properly labeled; original container
- comments: observed food stored in containers in all the coolers, proper labeling of name. Instructed to person in charge to provide a label reflecting the food item's name when food has been remove from its original packaging.
43. In-use utensils: properly stored
- comments: observed knives previously used stored on prep table, utensils stored in unused hot hold unit basins, etc instrutced to properly store utensils in between uses.
47. Food & non-food contact surfaces cleanable, properly designed, constructed & used
- comments: observed cardboard on floors throughout entire prep area. Instructed to remove and provide slip proof mats that are smooth and easily cleanable.
51. Plumbing installed; proper backflow devices
- comments: observed no sink stoppers on-site for manual warewashing. Must provide sink stoppers for 3 compartment sink.
55. Physical facilities installed, maintained & clean
- comments: observed broken/damaged flooring throughout main prep area. Instructed to repair and maintain.
58. Allergen training as required
- comments: observed no allergen training for certifed food manager. Obtain allergen training and maintain for all certified food managers.
