Report date: Aug 9, 202122. Proper cold holding temperatures
- comments: observed improper cold holding temperatures for tcs foods inside of the prep coolers. Observed chicken at 57. 7f and cooked mixed vegetables at 77. 8f. Management instructed to maintain all cold foods below 41f. Priority 7-38-005. Citation issued.
36. Thermometers provided & accurate
- comments: must provide a thermometer inside of the prep cooler in front of the cooking line.
38. Insects, rodents, & animals not present
- comments: observed evidence of pest activity on the premises. Observed 2 live cockroaches on the prep table next to the exposed hand washing sink in the rear food prep area. Also observed approximately 25 live small flying insects on the walls of the food prep areas, dry storage area, outside of the customer washrooms and in the dining area. Additional pest control service is needed to eliminate the pest activity throughout the premises. Priority foundation 7-38-020(a). Citation issued.
43. In-use utensils: properly stored
- comments: observed a plastic pitcher used to serve yogurt stored directly inside the container of yogurt. Management instructed to use a different utensil to serve the yogurt from this container.
55. Physical facilities installed, maintained & clean
- comments: replace the broken floor tiles in the rear food prep area. Regrout the floor tiles where needed especially in the dish washing area and rear food prep area where water is collection between the floor tiles.
60. Previous core violation corrected
- comments: previous core violations not corrected from report #2492338 on 3/2/21: 37 - observed bulk food containers that are not labeled throughout establishment (spices, rice). Instructed to provide the common name on each container that is out of its original packaging to properly identify food item. 49 - observed heavy grease build up inside of cooking fryers at service prep area. Must clean and maintain. 51 - observed no visible back flow preventer device on ice machine water line. Must provide. 53 - observed no lid on trash can in women's and employee bathroom. Must provide. 55 - observed dusty vents in employee bathroom and in men and women's washrooms. Also observed heavy grease build up at ventilation hood at service prep area. Must clean and maintain. Priority foundation 7-42-090.
