Priority foundation violation 7-42-090 citation issued. #40 observed employees in the food prep area not wearing a hair restraint. Instructed to have all employees that are in the food prep area to wear a hair restraint. Maintain same. #49 observed the interior and exterior of the fryers/cooking equipment with thick build up of food, grease and dirt. Instructed to detail clean and maintain cooking equipment. #49 observed the following in need of detail cleaning to remove food, dirt, grease build up: -interior/exterior of the hand washing sink. -interior/exterior of all coolers/freezers including the rubber gaskets on the doors. -hot holding units -the pipes/conduits -storage racks in the storage and prep areas. Instructed to detail clean and maintain all. #55 observed the interior of the floor drains and floors in all corners and under/around all heavy equipment with food, grease and dirt build up. Instructed to detail clean and maintain the floor drains and floors throughout. -the walls and ceiling has food, grease and dirt build up on them. Instructed to detail clean and maintain walls and ceilings. #57 observed the food handlers on site with no proof that they met the food handler's requirements. Instructed to have the food handlers meet the requirements and provide proof. Maintain current certificates.
