- comments: found the following tcs foods at improper temperatures in the hot holding unit in the rear of prep area: found chicken @ 110f-128. 8f; tofu @ 112. 6f; and cooked potatoes @ 101f. Instructed must keep all tcs foods at 135f or higher at all times while in hot holding unit. Manager voluntarily discarded denatured foods during inspection. Priority violation 7-38-005. Citation issued.
