- comments: noted no certified food manager on duty while tcs foods (pasta, chicken) were prepared and served at the time of inspection. Certified food manager arrived at facility 30 minutes after inspection started. Instructed person in charge that a certified manager with a current city of chicago certificate must be on premises at all times when time and temperature control for safety(tcs) foods are being prepared, handled and/or served. Priority foundation violation #7-38-012. Citation issued.
16. Food-contact surfaces: cleaned & sanitized
- comments: observed ice scooper being stored on top of the ice machine located in the basement with the food contact surface exposed. Instructed on how to properly store ice scoop between uses.

- comments: observed no thermometer in the 1-door hot holding unit stored near the bar area. Instructed to provide conspicuous and easily readable thermometers inside all hot and cold holding units.
39. Contamination prevented during food preparation, storage & display
- comments: observed boxes of food stored on the floor in the walk-in cooler. Instructed manager to properly store and protect food items from contamination while stored by elevating at least 6 inches from the floor on raised shelving units.

- comments: observed a hole in the hallway leading down the basement. Instructed to seal.

- comments: observed exposed ceiling in the basement above the chest freezers. Instructed food manager to cover the ceiling so that it is sealed, smooth and easily cleanable.

- comments: observed previous core violation #39 (must provide a splash guard on the right side of the kitchen/dish hand washing sink between the sink and the drying rack of the dish washing machine) and #47(must not use milk crates as a means of elevation/shelving throughout the establishment. Floors must be accessible for cleaning and monitoring) not corrected within 90 day time frame on the inspection report #2359445 dated for 01/27/20. Instructed person in charge that the violation shall now classified as a priority foundation item due to non previous noncompliance. Priority foundation 7-42-090 no citation issued.
