- comments: observed evidence of pest activity on the premises at the time of inspection. Noted approximately 70 small rodent droppings in the corners of garage, warehouse attached to rear prep/storage, on top of stand-in place mixer, inside two door cabinet space in prep area, under breading station/ 3 compartment sink, behind deep freezer, in corners of dry storage connected to office and inside toilet room where toxic products are stored. Instructed to remove droppings, clean, and sanitize. Must eliminate activity. Priority foundation violation. #7-38-020 (a). Citation issued.
49. Non-food/food contact surfaces clean
- comments: observed all heavy equipment, including prep tables, in-place mixer inside salad cooling unit, and fryers bins stored throughout the front prep area with accumulated amounts of dried food debris and sauce splatter on surfaces. Instructed to clean and maintain.
51. Plumbing installed; proper backflow devices
- comments: observed sutility sink located in toilet room in disrepair, instructed to repair and maintained in good condition.
54. Garbage & refuse properly disposed; facilities maintained
- comments: observed lid not tight fitted on outside receptacle during time of the inspection. Must provide a properly attached covering and maintain to prevent pest harborage in said space. Priority foundation violation. #7-38-020 (b). Citation issued.

- comments: observed outside grease receptacle exterior surfaces in need of cleaning to remove dried food debris and grease buildup. Instructed to provide.
56. Adequate ventilation & lighting; designated areas used
- comments: observed missing bulb and no light in hallway outside of walk-in cooler and freezer storage areas attached to warehouse; must provide lighting in area. Noted bruned-out bulb in ceiling above breading station in prep as well as toilet room. Instructed to replace all burned-out bulbs and increase lighting in rear prep throughout. Must miantain adequate lighting.
