Report date: Nov 2, 202238. Insects, rodents, & animals not present
- comments: observed over 20 live small flies in the food prep/dish washing areas, and in the manager's kitchen office. Observed the small flies on the ceiling tiles and walls of said areas. Instructed to detail clean and sanitize all affected areas and contact pest control service to eliminate pest activity. Priority foundation violation 7-38-020(a). Citation issued.
49. Non-food/food contact surfaces clean
- comments: found accumulations of dirt, debris, and mold-like substances in the following areas: on the walk-in freezer and cooler door gaskets, on top of the hot-water dish machine, inside the large prep cooler (currently not in use), and inside the vulcan steamer. Must detail clean all said areas and maintain.
51. Plumbing installed; proper backflow devices
- comments: noted the 2-compartment sink faucet leaking. Must repair.
54. Garbage & refuse properly disposed; facilities maintained
- comments: found all dumpster lids open and unable to completely close due to overflowing garbage/cardboard inside the indoor waste receptacle room. Must keep lids covered when indoor dumpsters are filled and not in continuous use, and maintain.
55. Physical facilities installed, maintained & clean
- comments: found heavy dirt and debris build up on the floors in the dish area, behind cooking equipment, and by the mop sink. Observed food splatters on the walls in the dish area. Must detail clean said areas and maintain.
56. Adequate ventilation & lighting; designated areas used
- comments: observed a black mold-like build up and dust on the fan covers inside the walk-in cooler. Must clean.
