- comments: observed the low temperature dish machine not able to sanitize. 0ppm of chlorine. Instructed pic to have the machine serviced so that it properly sanitizes at 100ppm of chlorine. Unit was tagged and can not be used until reinspected by a cdph inspector. Priority foundation 7-38-025 violation citation issued
35. Approved thawing methods used
- comments: observed chickens not properly being thawed, sitting in water in a compartment of the 3-compartment sink. Instructed pic to properly thaw under cool running water, microwave or in the cooler. Maintain same.
38. Insects, rodents, & animals not present
- comments: observed 4 large brown roaches on the dish washing machine and on the wall behind the dish washing machine. 100 rodent droppings along the walls/corners behind the cooking equipment, storage racks and freezers in the prep and rear dining area. Instructed pic to remove all roaches and droppings from the premises, clean/sanitize the areas and to have pest control service the premises before the reinspection date. Priority foundation violation 7-38-020 citation issued.

- comments: observed employees in the food/dish washing area not wearing a hair restraint. Instructed pic to have all employees entering in the food/dish washing area to wear a hair restraint and maintain.

- comments: observed the interior/exterior of the deep fryers and cooking equipment with charred food, grease, dirt and debris build up. Instructed pic to detail clean and maintain all cooking equipment.

- comments: observed the storage racks and the lower surfaces in the walk/reach in coolers with food and dirt build up. Instructed pic to detail clean and maintain walk/reach in coolers.

- comments: instructed to clean walls and floors around, under and behind equipment to remove dirt, grease and rodent droppings. Instructed to clean the ceiling vents in the kitchen to remove dust, clean vent on the ceiling in the washroom to remove dust.

- comments: observed food handlers on site with no food handlers certificates. Instructed the pic that all food handlers must obtain the required food handler training certificate.
