- comments: observed approximately 100 small flies in bar, kitchen, and upstairs dry storage. Must eliminate all small activities. Priority foundation violation 7-38-020(a)
48. Warewashing facilities: installed, maintained & used; test strips
- comments: observed gauges on high-temperature dish machine not working. Machine was run and is maintaining 161f at plates surface, but gauges must be repaired or replaced to reflect sanitizing temperature of 180f or more at manifold. Priority foundation 7-38-005 citation issued
55. Physical facilities installed, maintained & clean
- comments: observed floors unclean in the main bar under ice bins in corners. Clean and maintain. Observed standing water under ice bins at bar. Observed standing water under 3 compartment sink in dishwashing. Observed floors unclean at server station across from bar. Maintain all floors in a clean and dry condition.
