47. Food & non-food contact surfaces cleanable, properly designed, constructed & used
- comments: observed raw wood board under prep cooler at end of main cooking line. Observed raw wood board on floor underneath cooler. All raw wood must be removed and surface must be a smmoth easily cleanable.

49. Non-food/food contact surfaces clean
- comments: observed grills and ovens with excessive accumulation of grease and food debris. Clean in detail and maintain.

54. Garbage & refuse properly disposed; facilities maintained
- comments: observed grease trap under high temperaure dish machine has 2 round circular openings in floor leading to grease trap. Openings must be degreasead and covered to deter insects and odor.

55. Physical facilities installed, maintained & clean
- comments: observed floors very unclean under and behind cooking equipment. Must pull coolers out and clean under and behind equipment on cooking line. Observed floor drains clogged with grease and food debris. Must clean and maintain. Observed floor drain near high temperaure dish machine needs drain cover.

- comments: observed coving missing on end of cooking line along base of walls behind cooking equipment. Openings in walls creating insect harborage. Install coving and close all holes to deter insect harborage.

- comments: found floors not clean at following areas: under cooking equipment at main kitchen, mop sink areas, under bar areas, and dishwashing areas. Must clean.
