Report date: Oct 16, 20239. No bare hand contact with rte food or a pre-approved alternative procedure properly allowed
- comments: observed the cook preparing and handling ready-to-eat foods such as bagged salad mix with bare hands. Also observed the front prep employee handling money at the cash register then proceed to prepare hot and cold beverages with ice, fill tea bags, reach-in coolers, serve plated foods to customers without washing hands between tasks. Reviewed there is no bare-hand contact with ready-to-eat foods and reviewed when and where to wash hands properly. Priority violation 7-38-010 citation issued.

- comments: noted pre-packaged prepared grab-and-go sandwiches inside a display cooler for sale containing cheese/dairy without an allergen warning labeling. Reviewed all foods containing allergen ingredients must have allergen warning labeling. Priority foundation violation 7-38-005 citation issued.

- comments: all unnecessary stored items such as piled cardboard and furniture stored on the rear outdoor walkway and stair well, unused dirty cooler in the basement liquor prep area must be removed to prevent rodent harboring.

Must clean and maintain. Raw wooden floor at the 1st floor three-compartment sink must seal to be smooth, cleanable, and non-absorbent ----missing floor tiles throughout the staff and customer washrooms. Must replace. ----raw wooden wall at the rear coffee prep station must be painted/sealed. ----hole/opening in the wall of the basement dish/prep due to repair. Must seal ----missing ceiling tiles throughout the basement liquor prep must be replaced.

- comments: no proof of food handler training or certificates available for review. Must provide.

- comments: previous core violations from 5-31-23 report #2576595 not corrected. #37-3-602. 11(a; b:1-4,6,7; c; d)-- all pre-packaged, prepared foods such as sandwiches salads in the grab-and-go display cooler must be properly labeled with the business name, address and list of ingredients. #39- 3-307. 11-- must install a splash guard on the right side of the basement prep hand washing sink. Between the sink and the drying clean dishes at the three-compartment sink. #41- 3-304. 14-- all wiping cloths in all food prep areas must be held in a container with a sanitizing solution. #55- 6-201. 11--broken tile and exposed raw wood on the wall hallway leading to the rear coffee prep. Must repair. Priority foundation violation 7-42-090 citation issued.
