13. Food in good condition, safe, & unadulterated
- comments: found frozen packaged sausage to appear unwholesome. Observed ice crystalization inside packaged sausage in freezer case on sales floor. Instructed all frozen tcs foods must be wholesome and intact. Operator voluntarily discarded all denatured meats during inspection. Priority violation 7-38-005. Citation issued.
21. Proper hot holding temperatures
- comments: observed tcs foods at improper temperatures inside hot holding unit. Found pizzas ranging in temperatures 101. 4f-121. 1f under heat lamp at hot food counter. Instructed all foods must be held @ 135f or higher at all times while in hold holding. Operator voluntarily discarded pizzas during inspection. Priority violation 7-38-005. Citation issued.
47. Food & non-food contact surfaces cleanable, properly designed, constructed & used
- comments: observed 2 sliding doors of display case in disrepair (covered in duct tape) in meat department. Must repair and maintain same.
51. Plumbing installed; proper backflow devices
- comments: observed faucet in disrepair at 3 compartment sink in meat cutting room. (plastic wrapped around faucet and several leaks). Must repair and maintain same. Observed hot water handle missing from faucet of 3 compartment sink (hot water available) in kitchen. Must repair and maintain. Men's customer restroom 'out of order' in rear of facility due to plumbing issues. Water continuously runs/ sensor damaged on washbowl sink. Instructed must repair and maintain.
55. Physical facilities installed, maintained & clean
- comments: observed floor of walk in heavily soiled in bakery department. Observed liquid on floors of fish walk in cooler. Must clean and sanitize these areas. Must keep floors clean and dry.
56. Adequate ventilation & lighting; designated areas used
- comments: observed dust accumulation on fan covers in ceiling of chicken prep room. Must clean and sanitize. Must maintain same.

60. Previous core violation corrected
- comments: observed previously issue core violations not corrected from report #2371074, dated 5/26/20. Must correct the following core violations: #47 observed aluminum foil used as a surface on several pieces of equipment in the main kitchen. Instructed aluminum foil not permitted for use as a surface covering. Must remove to make all surfaces smooth and easily cleanable. #55 observed water pooling in large cracks in floor of rear grocery dry storage room (near garbage compactor area). Must repair and make floors smooth and easily cleanable. Must maintain same. Priority foundation violation 7-42-090. No citation issued.
61. Summary report displayed and visible to the public
- comments: observed summar report from report #2371074, dated 5/26/20, not posted in plain view of customers (it was behind other documents at the customer service counter. Instructed must post most recent inspection summary report in plain view of customers at all times. Priority foundation violation 7-42-010(b). No citation issued.
