16. Food-contact surfaces: cleaned & sanitized
- comments: low temp dish washing machine not sanitizing at final rinse while being used, 0ppm obtained on test strips, machine is running on empty chlorine jugs. Instructed to provide proper sanitizer concentration for final rinse. Priority violation 7-38-025. Machine is tagged not allowed to use. Must contact the office of cdph for tag removal request.

- comments: refer to violation #32

32. Variance obtained for specialized processing methods
- comments: found vacuum packaging machine on site with no approved haccp plan, facility using machine to vacuum package fresh fish and other meats and hold for more than 5 days in walk-in cooler. Instructed manager to discontinue using machine and discard 10 lbs of fresh salmon valued at $60, machine is tagged not allowed to use. Contact the office of cdph for further inquiry. Priority foundation violation 7-38-005.

- comments: bulk food containers not labeled ( powdered sugar. . . ) instructed to label and maintain.

- comments: ice scoop placed on ice cubes at bar area, instructed to store off cubes.

50. Hot & cold water available; adequate pressure
- comments: no hot running water through out banquet kitchen, water temp is 68f. Kitchen is in operation during inspection. Hot water is available at the 1st floor restaurant kitchen. Instructed manager to provide hot running water for all kitchen sinks. Priority vioaltion 7-38-030(c). Instructed manager not to use banquet kitchen at this time.
