Report date: Jan 6, 202110. Adequate handwashing sinks properly supplied and accessible
- comments: observed no hand washing sign at the hand sink in the dry storage area near the three compartment sink. Instructed to provide and maintain.
37. Food properly labeled; original container
- comments: observed no label for bulk salt or sugar storage container stored on the bottom prep table shelf in the deli area. Instructed person in charge all bulk and working food ingredient containers must be labeled with contents name.
41. Wiping cloths: properly used & stored
- comments: observed wet wiping cloth laying on the prep tables, counters, and equipment throughout the food prep area. Must properly store wiping cloths in a sanitizing solution between use.
47. Food & non-food contact surfaces cleanable, properly designed, constructed & used
- comments: observed milk crates being used as shelving throughout women toliet room, dry storage area, and walk-in coolers. Must remove and provide shelving that is 6' off the floor and provides floor accessibility to ensure adequate facility cleaning.

- comments: observed cutting boards in the meat area with open seams and dark stains. Instructed to refinish or replace damaged or stained cutting boards and maintain at all times.

- comments: observed torn door gasket inside of the meat walk-in cooler door that leads to the dry storage room. Instructed to replace.
48. Warewashing facilities: installed, maintained & used; test strips
- comments: observed facility without a chemical quaternary test kit for sanitizer or for ware washing area. Informed person in charge a test kit that accurately measures the concentration of sanitizing solution must be provided. Priority foundation violation #7-38-005. Citation issued.
51. Plumbing installed; proper backflow devices
- comments: observed drainpipe leaking under hand washing sink in meat prep room. Also, observed a leak at the three compartment faucet in the deli/cafe area. Instructed manager to repair leaking drainpipe.
56. Adequate ventilation & lighting; designated areas used
- comments: observed an accumulation of dirt/dust buildup on the women toilet room exhaust ventilation. Must detail clean and maintain.
58. Allergen training as required
- comments: observed the certified food manager without an allergen training certificate. Management instructed to have all certified food managers obtain this certificate.
