22. Proper cold holding temperatures
- comments: observed improper temperatures tcs foods at the time of the inspection. Found three bowls of chicken noodle soup (52. 0-57. 0f), a bowl of chicken 57. 0f 15 1/2 gallons of milk found at temperatures ranging 50. 0-52. 0f. Chicken and chicken noodles, and half a gallon milk was found out at room temperature at the fron prep area and the 15 gallons of milk was found in the two door refrigerator in the rear storage area. Approximately 40lbs at $200 worth product discarded. Must have cold holding foods at 41. 0f or below. Priority 7-38-005, citation issued

33. Proper cooling methods used; adequate equipment for temperature control
- comments: observed inadequate refrigerator on site. Found the only two refrigerator at 55. 0f at the time of the inspection. Instructed all cold holding units must reach and maintain 41f or below at all times. Priority 7-38-005, citation issued

36. Thermometers provided & accurate
- comments: observed no ambient air thermometer inside the cold holding units on site. Instructed to provide and maintain.

38. Insects, rodents, & animals not present
- comments: observed approximately 40 or more mice dropping on site. Found mice droppings on the following floor and surfaces: floor and the white shelf in the hot water storage area, surrounding the cold/ freezer holding units in the rear storage area near the infant room, surrounding the lockers, in the storage closets, and near cots and toy shelf in roosevelt classroom. Instructed to remove mice droppings, clean, and sanitize all mentioned area. Priority foundation violation 7-38-020(a), citation issued

47. Food & non-food contact surfaces cleanable, properly designed, constructed & used
- comments: observed an opening in the lower wall in the front childrens toilet room. Instucted to seal and maintain.
