High Priority - Rodent activity present as evidenced by rodent droppings found. Observed approximately 10 rodent droppings under stove and and behind reach in freezer by walk-in cooler in the main kitchen. Operator started to clean and sanitize the areas. **Corrective Action Taken** **Warning**
High Priority - Time/temperature control for safety food reheated for hot holding not reaching 165 degrees Fahrenheit for 15 seconds within 2 hours. dirty rice (130°F - Reheating)at 10:45 to 135° at 10:55 since 9:00 ; yellow rice (120°F - Reheating)at 10:45 to 127° F at 10:55 since 9:00; white rice (129°F - Reheating)at 10:50 to 134° F at 10:55 since 9:00 -all in hot box next to three compartment sink. At this rate food will not reach 165° F within 2 hours. Food moved to the top stove to properly reheat to 165° for hot holding. **Corrective Action Taken** **Warning**
