22. Proper cold holding temperatures
- comments: observed tcs food found at improper temperatures during the time of inspection. Noted potato salad cups stored inside display cooler in front prep ranging between 58-62f. Observed eggs/milk stored inside the cooling unit with a cold hold attached at 50f during the time of inspection. Instructed to hold all cold tcs foods @ 41f or below at all times and maintain. Priority violation. #7-38-005. Citation issued. Pic discarded voluntarily.

33. Proper cooling methods used; adequate equipment for temperature control
- comments: observed 2 refrigeration units located in the prep area not at proper cold holding temperatures during the time of inspection. Noted temperature of unti with cold holding attached at @50f (storing eggs) and front display cooling unit near register @56f (storing potato salad cups). Instructed to repair units to 41f or below as required. Both units tagged and held for inspection. Priority violation. 7-38-005. Citation issued.

- comments: must provide themometers for all cooling units and mantain.

- comments: observed both doors to premise open during time of inspection. Once rear door closed noted at least 1/4 inch gap at bottom of door. Instructed to provide rodent proof doors and maintain in order to prevent pest entry.

Noted approximately 40 large rodent droppings on floors underneath 3 compartment sink, underneath shelving unit in rear prep and along wall behind all heavy equipment. Instructed to remove all said droppings and sanitize areas. Noted approximately 15 large live flies flying throughout prep areas, on walls behind 3 compartment sink and surfaces of cooling units. Noted approximately 8 small live flies on walls in toilet room and flying throughout office space. Instructed to contact pest control for service. Must eliminate pest activity. Priority foundation violation. #7-38-020 (a). Citation issued.

- comments: observed handsink in rear prep area piping not attached at bottom of sink and water pouring into bucket. Instructed to repair and maintain in good condition.

- comments: observed excessive amounts of grease/ food debris-filled buckets in the backyard area near the receptacle. Instructed to remove to prevent pest harborage and maintain premise free of clutter.

- comments: observed previous core violations not corrected from inspection report #2576797 on 6/5/2023 not corrected. They are as follows. . . #37) observed flour out of the original container without labels containing the product name. Instructed to label all foods and spices with common name that are out of the original containers #49) observed an accumulation of dust and food debris under shelves and tabletop equipment in the prep areas. Must detail clean all areas and maintain. Observed the exterior and door handle of the one-door reach-in cooler in need of cleaning. Instructed to clean. Observed grease buildup on cooking equipment, walls, and surrounding floors in the kitchen/prep areas. Instructed to degrease, clean and sanitize. #55) observed food debris spilled on the floors and surfaces throughout the facility. Instructed to detail clean under all shelving units, interior of prep coolers, hot-holding units, prep tables, and deep fryers to remove spills, food debris, dirt buildup, and-or grease. Must maintain at all times. Observed missing and damaged ceiling tiles in the rear dishwashing area over the refrigeration units and inside the hot water unit closet. Instructed to repair and maintain #56)observed the hood ventilation system and filters with a dust and grease build. Instructed to clean and maintain. #57) must provide food handlers training for all employees. #58) must provide food allergen training for all certified food managers. Instructed to correct all violations as required. Priority foundation violation. #7-42-090. Citation issued.

- comments: observed facility not in compliance with indoor air ordinace requirements not met. Observed evidence of smoking on premise with ashtray full of cigarette butts, ashes on tables in break room/office space inside facility. Instructed to comply. #7-32-101 through 090. Citation issued.
