- comments: observed vomit kit on site to be incomplete(no absorbent powder). Instructed person in charge to obtain full supplies and maintain on site at all times. Priority foundation #7-38-005. Citation issued.
22. Proper cold holding temperatures
- comments: observed tcs food(raw chicken) at improper cold holding temperature of 47. 8f. Instructed person in charge that all cold held food must be held at 41f and below. Person in charge voluntarily discarded 4lbs of chicken at a cost of $30. Priority violation #7-38-005. Citation issued.
38. Insects, rodents, & animals not present
- comments: observed mouse droppings too numerous to count scattered throughout premises in the following places; on the side of coolers in prep area, in all corners of prep areas, in rear dish area next to three compartment sink, in all corners in dish area. In rear dry storage room in all corners, on shelving and stored cans. Instructed person in charge to remove all droppings, sanitize all areas, and inform pest control of need for additional service. Priority violation #7-38-020(a). Citation issued.
52. Sewage & waste water properly disposed
- comments: observed inadequate waste and sewage water disposal from 3-comp sink when water is released. Water backs up from drain in floor. Instructed person in charge to repair and maintain. Priority violation #7-38-030(c). Citation issued.
56. Adequate ventilation & lighting; designated areas used
- comments: observed excessive grease and dust on all filters in hood system. Instructed person in charge to detail clean and maintain at all times.
60. Previous core violation corrected
- comments: observed previous core violations from report #2472758 not corrected: #49 observed accumulated dust, dirt and debris on interior and exterior surfaces cooking equipment, shelving units, rolling carts, prep tables, coolers, freezers. Instructed manager to clean and sanitize all food and non-food contact surfaces of equipment. #55 observed accumulated dust, dirt and debris on floors under all equipment, along walls and in all corners in prep and storage areas. Instructed manager to clean and maintain. Instructed pic to come into compliance with all violations and maintain. Priority foundation #7-42-090. Citation issued.
