Report date: Apr 13, 202610. Adequate handwashing sinks properly supplied and accessible
- comments: observed minimum hot water temperature to be inadequate at the handwashing sink in the hot foods prep area. Minimum hot water temperature measured at 74f. Must provide hot water with a minimum temperature of 100f. Priority violation, 7-38-030(c). Citation issued.
10. Adequate handwashing sinks properly supplied and accessible
- comments: observed metered faucets in the mens customer restroom immediately shutting off once activated. Instructed management to provide at least 15 seconds of running water to allow for proper handwashing.
16. Food-contact surfaces: cleaned & sanitized
- comments: observed a small amount of pink residue in both corners of the ice machine on the inside panel. Instructed to schedule a cleaning and maintain.
22. Proper cold holding temperatures
- comments: observed time/temperature control for safety foods (milk, tuna salad, chipotle chicken) at improper cold holding temperatures located in the reach-in drawer cooler in the main sandwich prep area and in barista cooler in the cafe station; 5 lbs of tuna salad at 51f, 5 lbs of chipotle chicken at 49f, 2 gallons of fat free milk at 45. 7f, and 5 gallons of whole milk between 45-46f. Instructed to discard and denature all said tcs foods and to maintain all cold holding tcs foods at 41f or below at all times. Management voluntarily discarded all said tcs foods. Estimated cost of food items $60. Priority violation, 7-38-005. Citation issued.

- comments: observed thermometer on the outside of barista cooler not working properly. Instructed to repair thermometer to accurately measure the ambient air temperature of cooler.

- comments: observed torn gaskets at the bottom of two door dessert cooler in the bakery section. Instructed to repair and maintain.
48. Warewashing facilities: installed, maintained & used; test strips
- comments: observed facility without a chemical test kit on site for chlorine sanitizing dish machine. Instructed management a test kit that accurately measures the concentration of chlorine solution must be provided. Priority foundation violation, 7-38-005. Citation issued.
49. Non-food/food contact surfaces clean
- comments: observed an accumulation of soil residues from food on the shelving units in the walk-in cooler. Instructed to detail clean all shelving and maintain.
55. Physical facilities installed, maintained & clean
- comments: must detail clean floor drain located in the hallway between walk-in cooler and walk-in freezer and walls with red and orange food splatter between soda station and ice machine in the wait station area and in the hot foods prep area next to handwashing sink.
