Observed roasted chickens at temperature ranging from 118.1f to 122.7. Chicken nuggets temperature ranging between 121.2f to 125.1f and fried chicken sandwiches temperature ranging between 115.3 to 123.6f. Must maintain proper hot holding temperature of 135.0f or above at all times. Manager immediately and voluntarily discarded approximately 14.0 lb of food value of $53.0. Priority violation 7-38-005 citation issued.

Instructed to clean nonfood-contact surfaces of freezer equipment at adequate frequency to prevent build up of ice, dust, and other soils and maintain. Priority foundation violation 7-42-090 citation issued.
