10. Adequate handwashing sinks properly supplied and accessible
- comments: 6-301. 14 observed hand washing signs missing from the walls around the hand washing sinks. Management instructed to post hand washing signs at all hand washing sinks.

22. Proper cold holding temperatures
- comments: 3-501. 16 observed improper cold holding temperatures of tcs foods inside of the walk-in cooler. Observed milk at 47. 5f, cooked okra at 46. 4. Cooked rice at 45. 3f, chicken at 47. 1f, beef at 46. 9f, eggs at 47. 6f. Management instructed to maintain all cold foods below 41f. Priority 7-38-005. Citation issued.

33. Proper cooling methods used; adequate equipment for temperature control
- comments: 4-301. 11 observed the walk-in cooler with an air temperature of 46f. The walk-in cooler was used to store tcs foods such as milk and chicken. Management instructed to repair and maintain the cooler below 41f. Priority 7-38-005. Citation issued.

38. Insects, rodents, & animals not present
- comments: 6-501. 112 observed several fly strips in the basement area loaded with dead flies. Management instructed to remove. Dead roaches on floor and on dishmachine in rear utensil washing area. Must clean.

47. Food & non-food contact surfaces cleanable, properly designed, constructed & used
- comments: 4-101. 11 observed frozen meats stored in plastic grocery bags in the freezer. Management instructed to use only food grade storage bags or containers.

48. Warewashing facilities: installed, maintained & used; test strips
- comments: 4-603. 15 observed several large pots in the basement area which are too large to be submerged in the 3 compartment sink. Must remove the pots or provide a written alternative cleaning method which is acceptable to cdph.

49. Non-food/food contact surfaces clean
- comments: 4-602. 13 clean the interior of the prep coolers, prep tables, stove, grease trap, deep fryer and food storage containers. Replace the heavily soiled dish trays used inside of the dish machine. Clean the wire storage racks in the walk-in cooler.

55. Physical facilities installed, maintained & clean
- comments: 6-501. 12 clean the walls, floor and baseboard of the food prep areas with heavy food debris and grease buildup.

59. Previous priority foundation violation corrected
- comments: 8-404. 13(b)(3) previous priority foundation violation from report #2510762 on 6/3/21 not corrected: 38 - observed 15 live cockroaches on the floor and walls of the dish washing area. Additional pest control service is needed to eliminate the pest activity. Priority 7-42-090. Citation issued.

61. Summary report displayed and visible to the public
- comments: 8-304. 11(a) previous inspection report summary from 6/3/21 was not posted on the premises. Management had a passing report summary from 2020 posted. Management was given a copy of today's inspection report summary and was instructed to post it in view of all customers. Priority foundation 7-42-010(b).
