- comments: noted improper internal temperatures of the following time/temperature control for safety food items inside walk-in cooler: 2 large bins of noodles 47.3°F and 50.5°F, chicken 55.9°F, manager discarded and denatured approx. 50 lbs valued at $60. Priority violation 7-38-005. Citation issued.
23. Proper date marking and disposition
- comments: observed ready-to-eat, time/temperature control for safety (TCS) foods (rice, fried crab rangoon & egg rolls, chicken & noodles) not date marked to indicate the product's name and date in which the food must be sold, discarded or consumed within 7 days. Instructed to provide proper labels for date marking and discard date for refrigerated, ready-to-eat, TCS foods held over 24hrs placed in all cold-holding units. Person in charge discarded and denatured approx. 15 lbs valued at $40. Priority foundation violation 7-38-005. Citation issued.

- comments: observed shelves in walk-in cooler not clean. Noted encrusted food debris, black and white substance and shelves with rust. Instructed to deep clean and sanitize. Restore to a smooth and easy to clean surface by paint and sealing or replace and maintain.

- comments: noted slow drain at kitchen's south handsink next to 3 compartment sink. Instructed to repair and maintain.

- comments: noted floors underneath prep cooler across from cook's line not clean. Instructed to deep clean all floors in kitchen and maintain.
