- comments: observed female employee washing multi use utensils with only soap and water, rinsing off and placing on shelf to dry. 3-compartment sink not set up nor any sanitizer used. Instd on proper set up of sink to properly wash, rinse, and sanitize of all multi use equipment. Multi use equipment was properly washed, rinsed, and sanitized after instructed. Citation issued 7-38-025 priority

- comments: interior of ice machine with slight residue/soiled. Instd to clean and maintain

22. Proper cold holding temperatures
- comments: variety of sushi handrolls (california, salmon, tuna) in refrigeration unit at improper cold holding temperatures ranging from 60.2f-70f. All handrolls discarded and denatured at this time. Approx 20lbs $100 value. Instd to maintain cold foods at 41f or below at all times. Citation issued 7-38-005(a)

- comments: no consumer advisory with disclosure or reminder for raw food items on menu (salmon roll and tuna roll). Instd to provide consumer advisory with disclosure and reminder on menu and maintain. Priority foundation 7-38-005

33. Proper cooling methods used; adequate equipment for temperature control
- comments: refrigeration unit containing sushi handrolls at improper ambient air temperature of 46.7f. Unit tagged and held for inspection. Instd to repair and be able to maintain proper temperature of 41f or below. Instd not to use unit until reinspected by cdph. Citation issued 7-38-005 priority
